Thistle Hill – with its unique geological history this wine is made with one focus – reflect the special nature of the mineral-rich soils that were once ancient sea bed. My aim is to allow this site to express its origins.

Bouquet of ripe yellow and white fleshed stone fruit, ripe citrus and a distinctive core of minerality. On the palate - tense, youthful, crisp and dry. Flavours of citrus peel and grapefruit flesh, crisp apple, and a savoury dried herb.

How To Best Enjoy Our Wines

All of our wines can be enjoyed straight away. For cellaring we reccomend a cool dark space to ensure the wine ages gracefully for 3-5 years. Decanting is reccomend upon opening.

Dry on the palate with layers of spice and citrus flavours, the barrel ferment or ageing flavours layer in soon after with a hay and exotic tea suggestions. Fine textures from tannins and acidity meld with fruit flavours and mineral stone qualities. A balanced and well made wine that will continue to develop over the next 2-3 years. Best drinking from 2023 through 2027+."

It is an herbal expression that was handpicked and whole bunch pressed creating a fragrance full of green jalapeno and nettle flavours. Yet, it is not green in structure, it’s fully ripe with intense concentration and rich form. Firm but balanced acidity gives the wine a real purpose and seriousness."
